WEBAug 9, 2016 · I make small batch vinegars, Apple Cider Vin, Blueberry, Pear, Mango, etc. Each batch is between 7-25 gallons, using the Orleans method (or open fermentation). I use local no-spray fruit in season, and store bought organic out of season. Each batch ages a minimum of 3 months, currently some up to a year.
